Method
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- In a large bowl, beat the butter and sugars together on medium to medium-high speed until light and fluffy, about 1–3 minutes. Add the egg and mix until incorporated, then blend in the vanilla.
- Add the flour, baking powder, and salt by sifting them into the bowl (or whisking them together separately first). Mix on low speed just until the dough comes together, stopping to scrape down the sides as needed. Avoid overmixing. The dough will be soft and loose and will not form a firm ball. Gently mix in the chocolate chips on low speed until evenly distributed.
- Using your hands, bring the dough together and shape it into a ball. Divide the dough in half. Working with one portion at a time, flatten it into a disc and roll it out to about ¼-inch thickness between sheets of parchment paper or on a lightly floured surface. Use 2-inch cookie cutters to cut out shapes, re-rolling scraps as needed (see notes).
- Transfer the cut cookies to the prepared baking sheet. Bake for approximately 6 minutes, or until the cookies look set and slightly puffed. Remove them from the oven before any browning occurs.
- Let the cookies cool on the baking sheet for 5 minutes, then carefully move them to a wire rack to cool completely.
- Enjoy the chocolate chip cutout cookies plain, or drizzle the cooled cookies with melted chocolate and finish with festive sprinkles.
