Strawberry Glazed Bundt Cake

A delicious and fresh sweet treat. This bundt cake comes together easily and the two ingredient glaze is the perfect finishing touch!

Ingredients
  

Cake Batter
  • 1 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk room temperature
Strawberry Swirl
  • 1 cup fresh or frozen strawberries chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice
Strawberry Glaze
  • 2-3 tbsp strawberry puree
  • 1 cup powdered sugar

Method
 

For the Batter:
  1. Preheat oven to 325°F. Grease and lightly flour your bundt or loaf pan.
  2. Make the strawberry swirl: Mash strawberries with sugar and lemon juice until slightly chunky. Set aside.
  3. Beat butter and cream cheese until smooth, then slowly add sugar and mix until light and fluffy.
  4. Mix in eggs one at a time, then stir in vanilla.
  5. Whisk dry ingredients separately.
  6. Alternate adding dry ingredients and buttermilk into the batter, mixing gently until just combined. Begin and end with the dry ingredients.
  7. Pour in half the batter, add half the strawberries, then repeat.
  8. Gently swirl with a knife.
  9. Bake for about 1 hour 10 minutes, until a toothpick comes out with soft crumbs.
  10. Cool: Let rest in the pan for 15 minutes, then turn out and cool completely.
For the Glaze:
  1. Puree a 1/4 cup of strawberries that have been hulled and diced.
  2. Combine the powdered sugar and strawberry puree, adding a bit of puree at a time until the desired consistency is achieved.
To Finish:
  1. Once the cake is completely cool, gently drizzle the strawberry glaze over the top, letting it fall naturally down the sides.
  2. Slice and enjoy.

Notes

  • Room temperature ingredients make everything come together more smoothly
  • Mix just until combined for a soft, tender crumb
  • Keeps well covered on the counter for a couple days, or in the fridge a bit longer
