- Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a bit of overhang on the sides to make lifting the brownies out easier later.
- Add the rolled oats to a blender or food processor and blend until they become a fine, flour-like texture. Measure out ¼ cup of the oat flour and set it aside.
- In a large mixing bowl, whisk together the peanut butter, honey, brown sugar, egg, applesauce, and vanilla extract until smooth and well combined.
- Add the oat flour, cocoa powder, baking soda, baking powder, and salt to the bowl. Gently stir just until everything is incorporated. Fold in the 3/4 cup of the chocolate chips.
- Pour the batter into the prepared pan and smooth it into an even layer.
- Bake for 20–22 minutes, or until the brownies are set and lightly spring back when touched in the center.
- Allow the brownies to cool fully in the pan for about 1 hour before slicing. This helps them firm up and gives the best texture.
