Ingredients

  • 1/4 cup old-fashioned rolled oats to be blended into oat flour
  • 1/2 cup creamy peanut butter
  • 2 tablespoons honey
  • ¼ cup light brown sugar packed
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup semi-sweet chocolate chips divided

Method

Prepare the oven and pan
  1. Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a bit of overhang on the sides to make lifting the brownies out easier later.
Make the oat flour
  1. Add the rolled oats to a blender or food processor and blend until they become a fine, flour-like texture. Measure out ¼ cup of the oat flour and set it aside.
Mix the wet ingredients
  1. In a large mixing bowl, whisk together the peanut butter, honey, brown sugar, egg, applesauce, and vanilla extract until smooth and well combined.
Stir in the dry ingredients
  1. Add the oat flour, cocoa powder, baking soda, baking powder, and salt to the bowl. Gently stir just until everything is incorporated. Fold in the 3/4 cup of the chocolate chips.
Spread and top
  1. Pour the batter into the prepared pan and smooth it into an even layer.
Bake
  1. Bake for 20–22 minutes, or until the brownies are set and lightly spring back when touched in the center.
Cool completely
  1. Allow the brownies to cool fully in the pan for about 1 hour before slicing. This helps them firm up and gives the best texture.
