Mini Cinnamon Breads

These mini cinnamon loaves are delicious, sweet quick breads perfect for breakfast, brunch or dessert.

Ingredients
  

Loaves
  • 1 ¾ cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup 1 stick unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ¾ cup milk
Topping
  • 4 tablespoons unsalted butter melted
  • ½ cup light brown sugar packed
  • 1 tablespoon cinnamon

Method
 

  1. Preheat the oven to 350°F and lightly grease 10 mini loaf pans.
For the loaves
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream together the butter and granulated sugar until smooth and creamy. Add the eggs and vanilla, mixing until fully incorporated.
  3. Gradually add the milk and the flour mixture to the butter mixture, alternating between the two and mixing well after each addition, until the batter is smooth and well combined.
  4. Divide the batter evenly between the prepared mini loaf pans and set aside.
For the cinnamon topping
  1. In a small bowl, stir together the melted butter, brown sugar, and cinnamon until combined.
  2. Spoon an even amount of the cinnamon mixture over each unbaked loaf. Gently swirl the topping into the batter using a knife or skewer.
  3. Bake for about 25 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
  4. Remove from the oven and allow the loaves to cool in the pans for 1 hour. Carefully remove and transfer to a wire rack to cool completely.
