- In a medium mixing bowl, combine the flour, cinnamon, baking powder, and salt. Give it a good whisk to blend everything together.
- In a separate large bowl, cream the butter and brown sugar until the mixture looks light and fluffy – about 2–3 minutes.
- Mix in the egg and vanilla until smooth. Slowly add the dry ingredients, stirring just until a soft dough forms.
- Split the dough into two portions, wrap each one tightly in plastic wrap, and chill in the fridge for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment.
- On a lightly floured surface, roll the chilled dough out to about ¼-inch thick.
- Use your favorite cookie cutters to cut out shapes and transfer them to the prepared baking sheet.
- Bake for 8–10 minutes, just until the edges begin to turn golden.
- Transfer to a wire rack and let them cool completely before decorating.
- In a small bowl, whisk together the powdered sugar, milk, vanilla, cinnamon, and a pinch of nutmeg if you’d like.
- Drizzle the glaze over the cooled cookies and finish with sprinkles or a dusting of extra cinnamon.
