Cinnamon & Brown Sugar Cutout Cookies

These soft and warmly spiced cookies are the perfect little treat for the colder months. A simple cinnamon dough comes together quickly, chills beautifully, and rolls out perfectly for your favorite cookie shapes. Ingredients
  

Cookies
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Glaze
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • A pinch of ground nutmeg optional

Method
 

Make the Dough
  1. In a medium mixing bowl, combine the flour, cinnamon, baking powder, and salt. Give it a good whisk to blend everything together.
  2. In a separate large bowl, cream the butter and brown sugar until the mixture looks light and fluffy – about 2–3 minutes.
  3. Mix in the egg and vanilla until smooth. Slowly add the dry ingredients, stirring just until a soft dough forms.
  4. Split the dough into two portions, wrap each one tightly in plastic wrap, and chill in the fridge for at least 30 minutes.
Roll & Cut
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment.
  2. On a lightly floured surface, roll the chilled dough out to about ¼-inch thick.
  3. Use your favorite cookie cutters to cut out shapes and transfer them to the prepared baking sheet.
Bake the Cookies
  1. Bake for 8–10 minutes, just until the edges begin to turn golden.
  2. Transfer to a wire rack and let them cool completely before decorating.
Glaze & Decorate
  1. In a small bowl, whisk together the powdered sugar, milk, vanilla, cinnamon, and a pinch of nutmeg if you’d like.
  2. Drizzle the glaze over the cooled cookies and finish with sprinkles or a dusting of extra cinnamon.
